Olive Cheese Bread & Rolls
Ingredients
- 4 cups of sifted bread flour( Laucke)
- 1 cup semolina
- Pinch of salt
- Half a cup of sourdough starter
- 2 teaspoons of yeast
- 2 tablespoons of white sugar
- 1 cup of Luke warm water
- 1 cup of Luke warm milk approx
- 2 Tablespoons soft butter
- once mixed you can just massage a spray of olive oil before resting

Optional
Rolls /Bread
2 tablespoons LSA mix (Linseeds, sunflower seeds and almonds)
¼ cup combined Pumpkin seeds, sunflower, sesame and poppy seeds
Method
- Prepare my yeast first, cup of warm water mix 2 teaspoons yeast & 2 tablespoons. white sugar stir Let it sit for a few minutes till it froths up .
- Put my sifted dry ingredients into my mixer use a knead hook Bit of salt . dob of butter
- Add my sourdough starter yeast mix slowly add the milk till it the binds soft stretchy feel
- Just knead it by hand for a few minutes.
- Cover in plastic or wet towel Rest till doubles in size
- Add desired ingredients reknead
- Put in trays rest again score top.
Prepare 220degree oven. approx 30 minutes
Generally I've created many breads over the years. Once mixed I'll let it sit till it rises in a warm area, reknead add desired ingredients
Today's recipe I've basically divided the ingredients by half
Part one
Olive cheese Bread
I've depipped some kalamata olives and grated some parmesan cheese adding some dry chives in popping into a silicone tray letting it rest to rise again scoring the top putting it in 220degree oven. approx 30 minutes
Part Two
Rolls
Kneaded, by hand, cut into small portions and rolled into balls, on a flat floured tray letting them rest then bake.
Cooked both at the same time, bread middle rack rolls rack below .
Both came out crunchy on the outside soft in the middle.
Just cover with a teatowel once cooled.
Tips
- Test by putting a skewer.
- While cooking I use a spray bottle of water to create mist a couple of times while in oven.
I've been using this product for quite a few years, I buy it from Coles. It comes with the ingredients of bread flour and the packets of yeast inside the 10kl calico bag with an information sheet ,gives you a basic bread mix. With measurement guides for different size loaves. It's very good. Lots of baking at home but I haven't used it in the camp oven.
