Flour Tortilla

Ingredients
- 1 pound (about 4 cups) all-purpose flour, plus more for rolling out tortillas
- 1 teaspoon kosher or sea salt
- 2/3 cup vegetable shortening or lard
- 1 cup lukewarm water
To Prepare
- In a mixing bowl, combine the flour, salt, and vegetable shortening using your hands.
- Slowly add the lukewarm water, mixing until the dough comes together into a ball.
- Transfer the dough to the counter and knead for 2–4 minutes, until smooth and soft like play dough.
- Divide the dough in half repeatedly until you have 16 equal balls.
- Place the dough balls on a floured board or tray. Cover with a clean kitchen towel and let rest for 25–35 minutes.
- Heat a comal, cast iron skillet, or non-stick pan over low heat (do not grease).
- On a lightly floured surface, roll out each ball with a floured rolling pin, rotating the dough as you roll, until you form a 7-inch round.
- Place the tortilla onto the hot pan. You should hear a faint sizzle.
- Cook for 40–50 seconds, until brown freckles appear and air bubbles form across the surface.
- Flip and cook for another 40–50 seconds, until the other side is freckled and the tortilla puffs up like pita bread.
